This happens to me regularly also, and I have a high spec PC with 16GB of RAM.
Even basic tasks cause it to run out of resources, so it must be leaking memory somewhere. Works fine once you restart it, but it is annoying.

Try setting the requirement to 'at least' 1 in the extraction settings. I have noticed occasionally it will not extract certain elements if this is not set, even though they highlight perfectly fine when done manually.

Thanks very much for your help. I will give it a go. I managed a workaround by finding 2 separate common entities on each page, then used the 'Text Gatherer' > 'replace' function to replace the text with the data I needed.
